Breakfast Today: Keeping it Simple. Avocado on Sprouted Grains

I’ve been asked to share more of my breakfasts with you all, just the way I sometimes share my packed lunches. No burden there: breakfast often feels like my favorite meal of the day, and I love talking about it, sharing it, gazing upon tasty examples of it. This winter I’ve been gravitating toward warmer and denser foods, rather than smoothies or chia puddings, which is funny, because it happens to be a very mild winter! But the body wants what the body wants.

Lately, I’ve been cooking up steel cut oats in my rice cooker with homemade almond milk and serving them with nut butter or hemp seeds. I also like oat bran served with some goji berries and a drizzle of blackstrap molasses, or some of my toasted almond quinoa bake. On days when I want something savory, I love some plain, cooked quinoa mixed with greens and vinaigrette, a breakfast salad, or leftover curries, soups, or grain dishes.

Today, I woke up craving something comforting and savory. I also woke up with a to-do list that was making my head ache just to contemplate. With little time on my hands and a lot to get done, I decided to make my life easy, and go for one of my simplest, tried-and-true breakfasts: smashed avocado toast. Normally I serve this on sprouted grain bread (Ezekiel is my brand of choice, but I also like Manna bread), but sprouted English muffins are nice, too.

Just cut a large avocado in half and remove the pit. Then, use your fork to mash half the avocado up (still in the skin if you like). Spread it onto a hearty, whole grain toast, sprinkle with salt and pepper, and serve.

I used such a giant avocado that I had extra avocado leftover to pile on top of some fresh greens—which I’d been craving as well.

Simple. Fast. And delicious. Everything I want in a breakfast. Next time you’re in a serious time crunch, I couldn’t recommend this little combination enough. It’s gotten me through countless mornings and afternoons in a hurry!

  1. Smashed avocado on toast is often a go to snack for me as well, with a little salt, pepper, and garlic powder. I’ve also served it with some baked beans as a sort of twist on a hearty English breakfast.

  2. This looks like something I’d like to snack on right now- I love avocado toast!
    However, it does bring me to a breakfast question: does this tend to be filling enough to last a morning? I have been having a hard time finding a healthy breakfast that keeps me full until lunchtime. I try to have snacks on hand but sometimes I get too busy at work to enjoy them. I love your posts on creating a balanced meal (especially the one on salads!!!). Do you have any tips for carrying this concept over to breakfast? Thanks!

  6. This is one of my favorite go-to quickie breakfasts and snacks, but I like to add mustard 🙂 No so much in the morning, but definitely if I have this for a snack.

  7. “Smooshed avocado” is my favorite food group – glad to see you featuring it and all of its versatility in these past few posts. It’s one of those foods that nourishes my body and soul. In fact, an Ezekiel english muffin + smooshed avocado is one of my favorite snacks or lunch accompaniment!

  10. My mom always mashed up banana and avocado and put it on toast for me when I was young. I thought it was something everyone already knew about but when I made it for my niece last week, my sister in law acted like I’d discovered gold! So simple and so good.

  11. There is no question that I love salad. Salad for lunch, salad for dinner… green juice and green smoothies for breakfast. Why can’t I seem to get down with salad for breakfast? It just seems so logical!

  13. I’ve made this for lunch before as an open-faced sandwich with grated carrots and sprouts, but I’ve never thought to have it for breakfast. What a great idea! Also, I really like the other ideas you listed for breakfast – I can never get enough oats!
