Classic Choosing Raw Guacamole

Greetings, everyone!

Hope you’re enjoying the holiday weekend. I’m catching up on some work, some housekeeping, and some time with friends, but to kick off the first official weekend of the summer, I wanted to share what is undoubtedly my favorite summertime lunch!

The recipe could not be more simple: whip up a batch of guacamole, and serve it however you want. You can eat it with crudites, in lettuce wraps (butter lettuce and romaine leaves are great for this), or scooped atop a giant salad. This meal is quick exit and perfectly combined, so it’s ideal for lunch, yet filling enough for a light dinner.

Best of all, if you double or triple the guacamole, this is a wonderful recipe to entertain with. I love having friends over, putting out a huge platter of butter and romaine leaves, crudites, and guacamole, and letting my guests assemble wraps.

I like my guacamole tart and sweet, and without red onion, natch. But I suppose the onion could be added if you like a more traditional flavor 🙂 Here’s my version:

Guacamole (serves 1 or 2 — I usually devour the whole recipe!)

1 avocado, pitted and chopped
1/4 red pepper, finely diced
Handful cherry tomatoes, chopped into small pieces
Juice of 1 lemon or lime
1/2 cup cilantro, packed and chopped
1 teaspoon maple syrup or yacon syrup
Sea salt and pepper to taste

Begin my mashing the avocado and lemon or lime juice with a fork, till it’s mushy but not entirely without texture. Add the rest of your ingredients and mix again. Voila!

Stuff this into butter leaves for wraps:

Or simply serve it alongside your salad or veggies.

I sometimes add a batch of this recipe to a big bowl of greens and mix it all up as a salad.

It is additionally has nutritional vitamins A, B 12, C, E, calcium, iron, thiamine, niacin, riboflavin, folic acid, phosphorus, zinc, magnesium and manganese. Very Good!

  3. OMG!!! I am new to this raw malarkey and this is the first thing I’ve tried – mainly coz it was so easy. It is amazing!!! I’m not sure what cilantro is so put in fresh coriander and it was lovely. I could live off this stuff. Want a dehydrator now to make corn chips to go with it!!

  4. I made this guac tonight with raw tacos (using walnuts + spices for the “meat” and cashews + spices for the “cheese”), wrapped in romaine leaves – my boyfriend loved it! We had a similar recipe at a raw restaurant in Pass A Grille, Florida (near St Pete) and had to recreate it!

    Gena – have you found any raw places you want to try in Miami? I’ll be going there soon & would love to hear what you find!

    I left out the stevia, but other than that followed your recipe exactly and served it as pictured. It was delicious and the had excellent presentation. I appreciate the recipe! There are several of your recipes that I’m looking forward to trying.

  7. Thank you so much for writing the article on the avocado and other raw fats. I don’t have the mainstream SAD fear of fat but more the fruitarian’s fear. I have been eating them daily (even two) and have not felt bad or gained weight. Thanks!

  12. Your guac looks lovely – I would omit red onion too! I can’t stand onion/garlic flavor when it lingers, which is unfortunately usually when consumed raw. I actually had my first raw entree today so of course I thought of you. There’s a new-ish spot called Adelina on 17th between Park Ave South and Irving, and they have both raw and vegetarian menus. I had spiralized zucchini spaghetti primavera with a cashew cream sauce, something I’m sure you’ve had many versions of. It was really bland, so as someone who’s new to the raw way of eating but “rawcurious”, I’m wondering if that tends to always be how this dish tastes or if it just wasn’t prepared in an exciting way. Have you been to Adelina yet? I’m jealous of your blogger lunch at Caravan of Dreams – I’m so bummed I couldn’t make it, but that restaurant is on my list of “to-try” restaurants now for sure!

      I have a recipe for this in my recipe tab (which is under construction). It *should* be unbelievably tasty! So don’t be fooled. I’ve been to Adelina and think it’s cute, but definitely sounds as though they didn’t hit a home run with that dish.

  13. its amazing that your recipes still continue to tempt me … even in winter months. I agree that you should publish a uncookbook of your own – what i love about your recipe is that it is for everyday use – ie not all nut/dried fruit/seed based. 😀

  14. The sounds like the perfect meal for a warm day – do you find the avocado starts to brown very quickly? Or do you think this is something I could make in the morning and take to work for a nice lunch in Central Park? 🙂
