Tomorrow, most of America will be gathering at cookouts, potlucks, family dinner tables, and other social occasions. If you plan on celebrating the 4th, why not celebrate it with some delicious, healthy, and cruelty free fare? Here are my favorite recipes for summer partying:
1) Ginger Lime Edamame Sweet Potato Burgers
3) Cheesy Vegan Sweet Potato and Black Bean Enchiladas
4) Roasted Summer Vegetable Pesto Pasta Salad
5) Raw Mexican “Rice” Pilaf with Spicy Cheese Topping
6) Ridiculously Healthy Millet, Kale, and Yam Burgers
7) Tangy Potato Salad with Basil Chiffonade
8) Sesame Noodles (can be served over cooked pasta or raw zucchini pasta)
9) Zesty Orange Cashew Cheese (awesome dip/bruschetta spread!)
12) Smoky Avocado and Cumin Dressing with Jicama Slaw Salad
Happy July 4th from the Nation’s Capitol!

I made this tangy potato salad yesterday and we devoured it!! Thanks for awesome recipe!!! I’ve shared it on my blog as well, so I can pass it on to others as a great summer side item!
These all look delicious. I think I am going to try the yam burgers first. Yummmmmmy.
Mmm, a spread like that would be heaven! In case you don’t know, one of the best places in DC to view fireworks but avoid the insane crowds is up 18th St & California. And if you walk 6-7 blocks north of there, you can check out Amsterdam Falafelshop! Ah, I so miss DC, especially in summertime!
Thanks Gena! I am hosting a big un-bbq at my house and serving 4 different kinfs of veggie burgers that I have never made before. Should be a riot! Have a great 4th!
I made your millet/kale burgers a while back and while they were pretty yummy-they took forever to make! There were so many steps, but I guess practice will make it easier.

Hey Gena, making your fig bars right now and I noticed the ingredients say baking soda but the instructions say powder. I’m going with soda and hoping it works!
Wow, thanks for the trip down memory lane, Gena!
Zesty Orange Cashew Cheese & the Jicama slaw (last recipe)…totally forgot about those and wanted to make them way back when, thanks for the reminder.

All of those things look amazing. You have created some really awesome stuff over the years Lady! I am going to be making vegan blueberry pancakes with a raw strawberry coolies!
I don’t have all the stuff to make those edamame burgers now, but I can assure you they’ll be making an appearance this week. Everything looks great!
Wonderful recipe list, thanks! Especially the Ridiculously Healthy Millet, Kale, and Yam Burgers! Now I’m hungry for another breakfast. 🙂 Happy 4th to you!
For the sesame noodles, do you use minced ginger or ginger powder? It sounds like a great recipe to make for my fiancee’s parents when we visit them next week!
I’m drooling on my keyboard!
Happy 4th to you too!
