Two Ingredient Vegan Matcha Green Tea Ice Cream

Last week, I shared my newfound enthusiasm for matcha green tea–and with it, a recipe for matcha green tea chia pudding, which is delicious. I had another idea for matcha brewing, and not surprisingly, a few of my readers suggested it, too: matcha-infused banana soft serve. Yesterday, I tested this simple recipe and ate it with delight. It was my first batch of banana soft serve of the summer, and oh, what a batch it was. With only two ingredients–bananas and matcha powder–you too can enjoy this energizing, sweet, and summery treat.

Two Ingredient Vegan Matcha Green Tea Ice Cream

Ingredients

  • 2 large or three small bananas, peeled, chopped into chunks, and frozen
  • 1 tsp matcha green tea powder

Instructions

  • Place the banana chunks in food processor fitted with the S blade. Turn the motor on and let it run until the bananas have been blended into a creamy mixture with the texture of soft serve ice cream. This may take a couple of minutes, and your food processor might make some loud noises, but trust me, it'll work (note: mini food processors won't work for this recipe).   • When the mixture is creamy, add the matcha powder and process till the color is uniform. Serve immediately. Ice cream can be frozen and then re-processed for the same texture. Makes 2-3 servings.

As with the original banana soft serve, this isn’t really a “recipe,” so much as a process. And you can do whatever you want to enhance it. Cacao would probably taste heavenly mixed in, or a topping of fresh berries, or some cacao nibs. Sky’s the limit.

The matcha, of course, gives this soft serve a super energizing kick. So if you’re inclined to enjoy it for breakfast (maybe with some almond butter or hemp protein mixed in), I sure won’t stop you. Excuse me while I add that to the “upcoming breakfasts” list!

  3. LOVE frozen bananas, eat them as popsicles or spread w/ nut butter. Haven’t tried to food process them. Would a blender work ok?

    Have to ask – is the DoMatcha worth the $ or is there a less pricey matcha I could start with? I’ve only had matcha once, this past week in a smoothie from Protein Bar.

    Also, re carob – people like Chatfield chips/powder? They seem to be the only ones both gluten and dairy free.

  5. Looks yummy! I wouldn’t have thought to pair the flavors of banana and green tea, but now I can imagine how they would taste great together. Just curious about that one ounce tin of matcha powder you link to in the recipe: can you tell me approx. how many teaspoons that is? Thanks : )

  8. I make banana soft-serve pretty frequently, always with peanut butter and cocoa powder. So delish. I do make mine in my Vita though. While I usually use a splash of almond milk to get things moving, it will come out thick and awesome like back when I had a food processor.

    • I never quite mastered the art of Vitamix soft serve; mine always ended up more like a thick smoothie than ice cream. I should revisit!

      • I’m pretty sure that after you move it from the vitamix to the container, you freeze it a bit more to make it scoopable.

  9. I used to do this all the time! Carob chips/powder would be an awesome addition to this. Carob and matcha go really well together 🙂 <3

    • Heather, I’ve heard of people using avocado in this same way (freeze, then food process/blend). You could try that, though I’m not sure how well avocado goes with matcha…

    My favourite version is cacao & peanut butter, but now I really want to try it with matcha.

  11. Ah, the comeback of banana soft serve! I haven’t made it in a while, but I’ve been eating frozen bananas daily, in the form of straight up chunks (for lack of a more appetizing word, haha). I’m kind of addicted. I purposely let big batches of bananas get super ripe so I can break them up and keep them in a freezer bag. They make for easy snacks and quick breakfasts! I have a question for you, though. Which Vitamix do you use? I’m thinking about investing in one soon, but there are so many different models. Is there a specific Vitamix series you recommend?
