If you need a holiday dish that’s festive, super colorful, and nutritious, this is it. It’s the perfect type of salad for fall and winter, served warm and yet still abundant in greens. It’s easy, too—the most work you’ll do is to give your kale a good massage 😉 Crispy chickpeas add plant protein, while roasted apples and red onions create these wonderful, deep, sweet and savory notes.     Could not be more head over heels for this vegan a Could not be more head over heels for this vegan apple pie with streusel topping! 😍

As much as I love practicing my lattice skills, honestly, this is a season of easygoing baking for me. I love that this pie requires only a bottom layer of pastry. The decoration is as simple as layering a batch of tender, buttery crumb topping over juicy apples. The finished pie is so rustic and homey, with all of the cinnamon-scented, classic apple pie vibes! A scoop of vegan vanilla ice cream is optional but highly recommended 😊

Popping a bag of commercially frozen veggies into the oven is one of my favorite ways to get a vegetable side dish onto my dinner plate quickly. This my favorite thing to do with a bag of frozen cauliflower florets.     My favorite butter lettuce side salad 💚⁠

Summer may officially wear the label of salad szn, but as the days get short and the weather gets cold, I actually find myself craving fresh, green, crunchy things more than usual. This is my favorite side salad to fold together and pair with dinner, whatever that may be (pasta, casserole, hearty soup, etc.). The salad is tender, crispy, and flavorful, thanks to a zippy Champagne vinaigrette. And those butter lettuce leaves sure are pretty 🤩⁠
