Festive Sweet Potato Vegetable Juice

Earlier this week, I shared a refreshing green juice—cucumber, pear, mint, spinach—that had refreshed my spirits as I was finishing up my final exams. Today, I’m sharing yet another juice concoction, also a reward I gave myself after the last test was done, which I think is particularly fitting for the holiday season. It’s a sweet potato, red pepper, celery, and carrot juice with a touch of ginger, and I’m already a huge fan.

The idea for this juice comes from my friends at sweetgreen and sweetpress in D.C.. As you may remember, I helped to develop the sweetpress juice line earlier this year. I’ve been so proud and so happy to watch the juices sell so nicely; they’re now appearing at most of the DC area sweetgreen locations!

The newest sweetpress flavor is a sweet potato, apple, pear, cinnamon, ginger, and lemon. It’s very good—very sweet, but very good—and it inspired me to make a sweet potato juice of my own. Sweet potatoes juice up really nicely, which is interesting, given that I find the taste of raw potatoes (sweet or not) to be incredibly starchy and unpleasant. I suppose that juicing just extracts the sweetness and the micronutrients without the starch. Or something.

The ginger in this juice makes it warming, and the color is so festive for the holiday season. I encourage you to try it! Sweet potatoes are great source of beta carotene and Vitamin C, and the red pepper is very high in Vitamin C. Consider skipping the packet of powdered, flavored Vitamin C and sipping on something truly delicious.

Festive Sweet Potato Vegetable Juice

Serves 1-2

1 small or medium sweet potato, cut into quarters if necessary for it to fit through the juicer
2 carrots
1 large (or two small) red bell pepper
2 large stalks celery
1 1/2 inch knob of ginger

Run all ingredients through your juicer, and serve.

  1. Whenever I blend drinks, I always add spinach. It makes a great color to the drink and spinach has really good health benefits. You can’t go wrong with greens. Drink up to a healthy life style.

  2. Can the Festive Sweet Potato Juice or any of the juices be prepared in the vita mix…I gave up my juicer for the Vita mix

  5. I’ve always wondered if you could eat potatoes and sweet potatoes raw. Is it healthy? I’m assuming it is since you’re vouching for it here, but why do I have it in my mind that it isn’t normal? I’m definitely curious to try this out though.

    • Well, I’m only vouching for the juice, not the raw vegetable. As I said, I find raw sweet potatoes to be unbearably starchy!! Don’t know how anyone can eat them.

    Although I’ve juiced Sweet Potato before, I’ve never tried it with Red Bell Pepper. I will definitely have to give this recipe a try.

  9. Nice! So now I have two new juices to try since I haven’t made Mint & Pear one from earlier this week. I was wanting to have a new exciting juice for Christmas and it’s going to be one (or both) of these for sure. Orange is almost red right?

    • Haha, yes. I was going to try to sell this as a red and green theme, but decided to let the juices do the talking 🙂

  10. As I just finished day 1 of a 3 day juice fast, I am doing some web search and stumbled upon your site. Good stuff so far Gena! I had no idea sweet potatoes were juiceable. My juicer isn’t kick ass, just 400w, so I will find out tomorrow if it will happen. If so, I already have all of the recommended ingredients!

    As long as I am here, I have 2 questions. I start my fast day w a blended fruit shake (pineapple, papaya/mango, strawberry) and then go veggie juice the rest of the way, finishing w a veggie broth. 1- if I keep the excess broth (and veggies in a separate pot) in the refrigerator overnight, will they lose their potency? 2- is it ok to start w a blended fruit smoothie if on a juice fast? I just read your post about the differences between them. Thanks!!!

      I’m not the best person to ask about this, because I actually don’t fast (or endorse it) myself. People have different approaches to fasting–some folks allow for some blending, others don’t. Because I am ambivalent about whether or not the “digestive rest” is as helpful as it’s claimed to be, I’d certainly have no qualms about adding fiber. But then I’d probably not be fasting!

      Whether juices will stay fresh depends on your juicer. If you’re using a centrifugal juicer, probably not, but yes if you’re using a masticating juicer–overnight is OK.

  11. I always wondered if sweet potatoes could be juiced raw, but I never tried it. Now I know. This looks great! My goal for the New Year is to juice and eat more raw foods. Love your juice recipes which I have never seen before!
