Raw Red Pepper and Coconut Wraps

A couple of months ago, the very lovely folks at Blue Mountain Organics reached out to me, asking if I’d like to try a few of their products. Blue Mountain Organics is an online purveyor of certified organic raw and sprouted nuts, nut butters, flours, grains, dried fruits, and superfoods. The company is located in the heart of the Blue Ridge Mountains in the small agricultural community of Floyd, Virginia, and they put tremendous time and care into creating tasty, nutritious raw food snacks, and to upholding sustainable agricultural practices and fair trade policies.

Peter, the co-owner of Blue Mountain, told me that he’d read some of my posts about the “vagaries of raw wraps making,” then said: “it certainly can be an ‘exciting’ process juggling between dehydration cycles, and can vary day by day as the humidity changes too:>) We have struggled to get the size and thickness right as well as overcome the shelf life issue. I hope that we have it right, but I know that there is always room for improvement.” I laughed when I read this, because I’ve encountered all of those snags in making raw wraps, too.

I told Peter I’d be honored to sample some of the wraps he offered me. They came in three flavors: basil, sun dried tomato, and curry. They were all fantastic.

The texture is spot on (sturdy but not too thick), and the flavors are all a little salty and a little sweet. That combination is a sure path to my heart! I liked the tomato wraps best, followed by the basil and then by the curry. Blue Mountain also sent me a bunch of their other goodies, including “love bites” (which are sort of like chunks of energy), macaroons, raw bread, and some delicious crackers. What a lovely care package!

It didn’t take me long to polish off all of the tasty wraps, in a variety of combinations. Here’s one shot — a wrap filled with spiralized zucchini, tomato, arugula, and a little bit of pesto:

It has been a while since I attempted raw wraps (the last recipe I posted was my raw carrot and cumin wraps), but these delicious flavors inspired me to try a new recipe of my own. I noticed that all of the Blue Mountain wraps contained young coconut meat, and since I’ve been on a coconut yogurt kick lately, I had a coconut waiting to be used. This seemed like a perfect opportunity to try it in a raw wrap. That’s how my raw red pepper and coconut wraps were born. I was really happy with the results!

Raw Red Pepper and Coconut Wraps

Ingredients

  • Meat of one young Thai coconut about 1 cup
  • 1 large red bell pepper chopped roughly
  • 1/4 cup flax meal
  • 1/2 teaspoon sea salt or 2 tablespoons coconut aminos or tamari
  • 1 pitted date
  • 1/2 cup coconut water and extra as needed

Instructions

  • Blend all ingredients together in a high speed blender till totally smooth. If it's super thick or pasty, add a little more water.
  • Spread the mixture onto a single Teflex-lined dehydrator sheet and dehydrate at 115 degrees Fahrenheit for four or five hours, or until the top is relatively firm and dry. Place another sheet on top of the wrap, flip the two sheets over, and then peel the Teflex off of the bottom side of the wrap to expose it and continue dehydrating. Give it another four hours, or as long as it needs to be still pliable, but totally firm.
  • Cut the finished sheet in half. Makes 2 wraps.

You can fill these wraps with just about anything. I like using kelp or zucchini noodles, tomatoes, avocado, and any veggies I have around. Hummus is also a wonderful filling!

  2. I cannot thank you enough!! I made my entire Christmas dinner based on recipes from your site. I made changes here and there, but your recipes were the base. I wanted a unique theme and spicy foods and I wanted to play around with coconut. So, I started w Thai Soup, I actually found organic raw corn and pea shoots plus had some soaked organic cashews and sprinked all of that on top. then moved on to your coconut wraps, served w Thai salad and Spicy Thai dressing. I improvised by adding your Cheesy Red Pepper Dip for scooping / dipping the wraps. I ended with your Vanilla Chai Pudding and improvised w cardamom from your blueberry recipe by whipping up blackberries w dates and a little coconut butter and coconut water to create a parfait, then topped w fresh fruit. MY GOODNESS!! what to give your RAW Vegan boyfriend who has everything?? A gourmet RAW Vegan homemade meal, and tickets to IMAX The Hobbit rounds out the perfect afternoon and evening together!

    i look forward to making these the centerpiece of my christmas dinner this year for my wonderful raw vegan boyfriend. i don’t have time to experiment as the holiday is upon us! so i am trusting your work!
    i was thinking that one of the wraps could be made sweet and chocolatey without the flax, but with psyllium instead then stuffed w fig and pear then sliced for a dessert.
    any thoughts?
    i am hoping to find a delicious low fat recipe for broccoli soup.
    we just finished a 30 day juice feast and i don’t want to start heaping in the cashews!

  5. They sound wonderful. Looking for a low protein option & was wondering if the flax meal could be left out & still work? Or would you know of another comparable suggestion that is low protein? (PKU diet)

  7. i NEED to try these wraps! being a celiac, it’s always exciting to find an alternative to a romaine or collard green leaf! i try not to overdo it on corn products so they do in a pinch but i’d feel much better having something like this on my plate! i love all of the combos you mentioned esp the ‘italian’ inspired one. mmmm pesto!

  8. Even though I like to make just about everything from scratch, this is one thing that I think I’d buy rather than make since I got rid of my Excalibur as I’ve lamented before to you. But alas, this is why great companies & products exist, don’t they?

  9. Coconut is a fantastic base for raw wraps and the combination with red pepper is great. The sweetness of the peppers are nicely intensified through the dehydration process.

    I love red pepper wraps filled with guacamole or simply sliced avocado and salad. I blogged about these recently. They are one of my favorite simple meals. So satisfying yet easy to put together once you’ve made the wraps.

I’m still trying to figure out how to incorporate easy, raw meals into my diet while juggling my post-bacc and other commitments (which I know you understand better than anyone!) I definitely admire your skills in balancing all of it!

  11. I would love to give these a try—they look and sound delicious. Quick q regarding the Teflex dehydrating sheets that you mention using. Since I am new to dehydrating (I just got my Excalibur dehydrator the other day), I’m assuming you are referring to a diff. sheet rather than the ones that automatically come with the unit since the ones that come with the unit are a mesh-type liner (polyscreen). The Teflex must be a solid liner, yes? Do you have any suggestions as to which ones are best to use or does it matter? (because I do notice there is more than one type). Thanks so much.

  12. I have access to neither young coconuts nor a dehydrator nor have I ever seen raw wraps for sale in the UK. But I guess a girl can daydream!

    • Hey Hannah, you can dehydrate in the stove, at a temp below 40 Celsius. You can dehydrate soaked and sprouted grains to make living crackers and breads. I really liked dehydrated fermented wheat kernels.
