  • A lot of my weekend batch cooking end up in the form of soups and stews and stew-y dishes. No complaints—I could eat soup/stew forever. But whenever I batch cook something different, I’m reminded of how great variety is 🙌🏻

These stuffed acorn squash with garlicky greens & beans come together with minimal work, but they look and tasty fancy 💁🏻‍♀️ Having them for dinner after work this week has felt like a special treat, and I can’t wait to try some variations (I bet broccoli rabe would be awesome). So glad that it’s Thursday and I’m wrapping up another rotation of my internship. Feels appropriate that the weather in NYC today is so warm: a taste of spring and new beginnings to come. Have a good one!

  • Been a while since I posted a #notsaddesklunch! I’ve still been packing them, but they’re getting progressively less creative as the internship goes on 😉

Here’s what we’ve got:
✔️ Salad with romaine and red cabbage; topped with black beans, sweet potatoes, and roasted broccoli
✔️ For topping, herbed cashew cheese (the go-to recipe from my blog, with herbs pulsed in) and nice, syrupy balsamic
✔️ Almonds
✔️ Was chatting yesterday with @eat.well.together about needing to do a better job of getting my daily servings of fruit in! 🍎🍓🍇🍌 So, blueberries and an apple

  • Friday night meals are never my best work: I start the week off with a lot of recipe inspiration for my meal prep, but by the end of the week I’m out of ideas. This past Friday, I still got a great meal, thanks to @purplecarrotxo.

I don’t tend to think of myself as the target audience for meal kits—I love to cook and create recipes from scratch. But my creativity is running shorter than usual this year, thanks to the DI, and sometimes it feels great to cook something worthwhile without having to come up with a meal idea. My schedule is definitely showing me how great an option kits are for people who love to cook but don’t have a lot of time to plan. And I love that Purple Carrot meals are 100% #vegan, with quick & easy/high protein options.

This is the brand’s Chipotle Sausage Jambalaya, which features rice, a super spicy (and delish) vegan sausage, and kale. It was very easy to make, super flavorful, and I love the protein content—most definitely a Power Plate! Because the meal serves two, I’ve still got leftovers.

This is a actually a short internship week, thanks to the long weekend, but I’ve got plenty of food. Here’s what’s on the menu:
✔️ My Cuban slow cooker black beans (the last of last week’s batch)
✔️ Roasted cauliflower
✔️ Roasted broccoli
✔️ The tempeh hash from #powerplates
✔️ The second portion from last week’s @purplecarrotxo jambalaya (you’ll see the first portion tomorrow!)

Just posted a long weekend reading, with thoughts on two years of being on my own since the end of a long term relationship. Difficult to write about and a very vulnerable topic for me, but writing about it actually reminds me that I’m where I’m supposed to be, which is growing. Always growing.

  • Have spent this Sunday doing and not doing: soaking up time with family and friends, taking care of my batch cooking, but hitting pause on work so that I can have some idle time, too. Don’t quite have the energy to put thoughts into words for weekend reading today, so that’ll go up tomorrow.

Didn’t make this butternut chickpea curry over the weekend—I cooked enough for a family gathering that I didn’t need to make extra stuff—but it has been at the top of my list to make soon, so you’ll probably see it one of these days. It’s easy to make, and while it’s pretty mild, it’s packed with flavor. Plus, chickpeas + butternut = 🧡🧡🧡
