Snowy Sesame Seed Milk

Hey guys!

Here it is: the first snowy night of the winter season. Well, sort of: it’s first snowy/rainy/sleety/slushy night of the season–that lovely set of circumstances that weathermen like to call a “wintery mix.” As if by design, this has been a heavy working Saturday for me, so I’ve been able to spend most of the day inside with a fleece blanket. And tonight, I’ll be cozying up with my favorite new winter beverage: sesame seed milk.

So, remember when I made almond milk? I mentioned then that nut milks and seed milks lend themselves to endless variety. Cashews, almonds, brazil nuts, pumpkin seeds, hemp seeds, and pecans can all work well with my basic nut milk formula (1 cup nuts, 3 1/2-4 cups water, 4 pitted medjool dates, pinch of salt). One of the best nut milks I’ve tried was the sesame seed milk at SproutCraft here in New York. And since today’s weather called for a comforting seasonal beverage to go with my reading, and I happened to have some sesame seeds handy, my own snowy sesame milk was born.

The recipe? Practically a no brainer.

Snowy Sesame Seed Milk

Yields: 3 1/2 cups

Ingredients

  • 1 heaping cup of raw sesame seeds soaked for at least 2 hours and drained of soak water
  • 3 1/2 cups water
  • 4-6 pitted medjool dates you can adjust based on how sweet you'd like it
  • Pinch of salt

Instructions

  • Place ingredients in a blender and blend for a few minutes, or until they're totally smooth and creamy. Store the seed milk in the fridge for up to 3 days.

Sometimes I strain nut/seed milk, sometimes I don’t. I actually liked the richness of this blend as it was without straining, but if you want the mix to be smoother, go ahead and strain through a cheesecloth or a nut milk bag. If you want to warm the milk up a little, go ahead and warm it very gently in a pot, or let it blend in a high speed blender for a few moments.

This milk is creamy, flavorful, and delicious. Imagine the taste of tahini, but sweet. Or imagine liquid halvah.

  1. Can we substitute dates for date sugar? How much date sugar would the recipe need?

  2. I made this milk a few minutes ago and it’s terrible. It tastes so bitter! I think it might be because I chose the darker sesame seeds, maybe they were toasted. Anyway, I’ll try to down it, for the benefits it has.

    • The darker the sesame seed, the more anthocyanin it contains, which are powerful antioxidants. I tried Black sesame milk.. I didn’t like the nutty flavor nor it’s bitter taste, but I assure you, you’ll get used to the taste and flavor in no time.

    Do you know if a handheld blender will work? My regular blender broke. :/

  10. I will definitely try making this soon. It looks delicious! I need to get some new sesame seeds, though, because the last package I bought have a funny taste… they were from a Lebanese market and they taste slightly like zataar… I think some cross-contamination has occurred somewhere!

  11. ok, so i just made this sesame milk yesterday, plus i added a little bit of fresh grated nutmeg and vanilla bean……SOOO DELICIOUS!!! I dont like drinking almond milk straight, but this is rich and creamy and perfect by itself. I dont even have a good blender, so i strained it and added a bit less water so that it stayed creamy.

  14. You are too funny! I feel slightly less immature after reading this post because every time I write “nut milk,” I want to put a “tee hee” in parantheses, but I fear that no one is as sophomoric as I am! Haha. Guess you are, though! 😉

    I have experimented with a lot of homemade nut milks (teehee), but haven’t tried sesame yet! This really looks/sounds delicious!

  20. Alright, Gena- you asked for it- my raw challenge to you is eggnog! I’ve actually made partial headway, discovering that SoDelicious coconut milk with nutmeg and cloves, warmly gently in a pan, is not a bad analogy!
    This recipe looks very yummy. I’ve stopped buying nut milk and instead using nuts + water in any smoothie or context I used to use nut milk- but I haven’t actually blended up a plain old glass! Whenever I mention nut milk to my mom she starts joking about milking almonds… not dirty, but pretty ridiculous 🙂
    Those tees are cute. When I was little I had a shirt that resembled a Washington apple sticker that read “organically grown in Washington.” Too cute!

  22. Yum, that sounds delicious. Dairy has been messing with me lately so I’ve been testing different variations of milk. And I turned on the Christmas music the day after Thanksgiving, and it will be blasting until December 31.

    I suppose it would have a tahini-taste considering tahini is made from sesame seeds.
    Funny comment about Julie Powell’s book. I read her first and must be the only one who did not really enjoy it, so I assume I would not enjoy the next one either. I probably should not assume. It is interesting though that she is content with a career as a butcher – just the fact that people can find success and happiness in the oddest , and sometimes most basic, places.
    You write quite beautifully. I am afraid my blog is more a random assortment of light-hearted topics that may not interest many. Anyway, enjoy your day. I spend most days curled up reading or trying to be productive, but I usually fail 🙂

  31. “Imagine the taste of tahini, but sweet” That is RIGHT up my alley. Honestly, it looks like it would be better thick and unstrained as you left it vs. strained. Straining it would strip the goodness. But then you’d have ummm seasame milk pulp for crackers. So that could work…the possibilities are endlessly lovely!

    Love the tshirt linkage. I like the downward dog one. But the banana is a bit too flacid looking for me I think 🙂

  35. Wonderful description of the current weather situation in the city 🙂 haha. This sounds like a really interesting treat! I’ve been using a lot of almond milk but I can’t seem to drink it straight. I was too much of a milk drinker when I was younger that I always expect it to be more creamy and less nutty than it is. Oh well, perhaps this is a good alternative? I will let you know when I get the chance to try it, sounds interesting.

  36. Oh, excellent! I have about 5 pounds of sesame seeds in my pantry and I found that homemade tahini didn’t work out so well, so I will definitely be trying this. And holiday music? Heck yeah! Sufjan Stevens Christmas CD has been playing for a few days now.
