Weekend Reading | The Full Helping

It’s been a busy, emotional weekend in general, but the big news is that I got my first vaccine dose today! I thought I’d have a lot to say about it, but I don’t. I’m overwhelmed and grateful—that’s about all there is to it.

As I was waiting in line for my shot, I thought about waiting on line to vote in October. That moment, like this one, felt hopeful. It gave me a glimpse of change, of something new. How appropriate that my first dose should fall on Easter Sunday, a day that celebrates the promise of life beginning again.

This is one of those Sundays when I need to spend more time feeling, less time writing. But it does feel important to put into words how indebted I feel to everyone who made the vaccine possible. We’ve come a long way since last April.

And without further ado, here are some recipes and reads.

Recipes

A beautiful seeded sourdough from Amanda.

A colorful plate of blistered shishitos—with a fantastic looking cashew cilantro sauce—from Sher.

The coolest looking vegan deviled eggs!

A fun way to dress up my next Kite Hill ravioli splurge!

In honor of Easter, carrot cake cookies.

1. As a dietitian who specializes in EDs and disordered eating, I already know how hard this year has been for people with food struggles. But this article is a sobering reminder. Sending love to anyone out there who’s having a hard time.

2. The toll of remote work: loneliness. As someone who already struggles with working from home sometimes, this year has felt a lot more isolating.

3. La Verne Ford Wimberly of Tulsa, Oklahoma, has been attending virtual church services in style!

5. A fascinating examination of why animals don’t get lost.

My heart is grateful. A very happy Easter to anyone who celebrates today! I’ll be back tomorrow with a fresh spring salad.

Happy Sunday! It’s been a brisk few days here in New York, and I’m relishing the autumnal weather (even though work kept me indoors for most of the weekend). For the next two weekend readings, I’m all about vegan Thanksgiving. Here we go: Start your meal off with this hearty chanterelle mushroom and kale salad with lime tahini sauce. SO much flavor and texture in here! This poblano cornbread stuffing will make a fantastic accompaniment, and it’s even hearty enough to be a…

Early this week, I was flipping through Yoga Journal and found an article from the magazine’s archives, written by Keith Kachtick, about impermanence. It was written in 2008; in it, Kachtick recalls being on a trip to Miami, shell-shocked by the realization that his marriage was ending. Ambling through South Beach by himself, he stumbled on an exhibition of Tibetan art and culture that featured six Buddhist lamas completing a sand mandala in public. “[I]t was the first moment of genuine ease I’d…

So happy that the “12 finds” idea appeals to you guys — I’ll certainly be making it a regular feature from now on. Thanks for your comments! And here we are, just in time for some weekend reading. To start with, Laura–who writes the marvelous blog The First Mess–has created a vegan fennel and mushroom pate for Food52. What?! Sign me up immediately. Meanwhile, Emma, who writes the adorably titled My Darling Lemon Thyme, has a roasted cauliflower, chickpea, and quinoa salad with…

A while back I read a quotation from Diego Perez, who goes by the pen name of Yung Pueblo. It said, Maturity is knowing that when your mood is down you should not trust the way you see yourself. I happen to be down today. It’s not sadness or melancholy so much as overwhelm and fatigue, which has been an on-and-off-again theme this year. I’ve been sitting here for the past hour feeling awfully frustrated with myself for a whole catalog of reasons….
