1 1/2poundspeeled and cored apples, cut into 1-inch / 2.5cm pieces(4-6 apples, depending on size)
2tablespoonscane or coconut sugar
2teaspoonsgrated fresh ginger
3/4teaspoonground cinnamon
1 teaspoonvanilla extract or powder, optional
2 tablespoonsmelted vegan butter (substitute avocado or melted coconut oil)
Instructions
Preheat your oven to 350F. Lightly oil an 8 or 9-inch square (20-23cm square) baking dish.
Transfer the apples to your baking dish and add the sugar, ginger, cinnamon, vanilla, and melted vegan butter. Stir to combine.
Cover the dish tightly with foil. Transfer the dish to the oven and bake for 30 minutes. Remove the foil and give the apples a stir. Bake for another 15 or so minutes, or until the apples are tender, golden, and the juices have thickened up a bit. Serve or store.
