Vanilla Spice Pumpkin Overnight Oats

Ingredients

  • 1 1/3 cups unsweetened soy, oat, cashew or almond milk (315mL)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 cup pumpkin puree (120g)
  • 2/3 cup rolled oats (90g)
  • 2 teaspoons chia seeds (6g)
  • 2 large, pitted medjool dates, finely chopped

Instructions

  • Combine all of the ingredients in an airtight storage container with a lid. Mix well and cover.
  • Transfer the mixture to the fridge overnight.
  • In the morning, stir the mixture well. Divide it into two serving bowls and enjoy right away, or transfer the soaked overnight oats to individual serving containers and continue to store for up to three more days. The recipe can be doubled or tripled as needed.

Notes

Overnight oats can be prepared up to 2 days in advance.
