Ingredients
Flesh of 2 young Thai coconuts
about 2 cups
1/2
cup
coconut water
2
teaspoons
maple syrup
1-2
teaspoons
freshly squeezed lemon juice
to taste

teaspoon
vanilla extract
Instructions
Place all ingredients in a high speed blender and blend till totally smooth and creamy (2-3 minutes in a blender; the food processor may take a little longer). Enjoy with fresh berries or fruit of choice.
