Dijon Lemon Tahini Dressing

Ingredients

  • 1/4 cup tahini (60g)
  • 3 tablespoons freshly squeezed lemon juice
  • 2 tablespoons Dijon mustard
  • 1/8-1/4 teaspoon onion powder (adjust to taste; or, substitute with garlic powder)
  • 1/4 teaspoon fine salt
  • 1/4 cup water, additional as needed to thin the dressing (60ml or a little more)

Instructions

  • Place the tahini, lemon juice, mustard, onion powder, and sea salt into a liquid measuring cup and whisk to combine. The mixture will seize up a bit. Add the water, 2 tablespoons at a time, whisking as you go. Add enough water for a rich and creamy, yet pourable, dressing.
  • Store the dressing in an airtight container in the fridge for up to 5 days or freeze it for up to 8 weeks.
