Ingredients

mixed baby greens
spinach, kale, mesclun, etc.

small sweet potato
baked or steamed and cut into 3/4" chunks
1
cup
spiralized zucchini
1
small or medium heirloom tomato
chopped into 1/2" chunks
1/4 - 1/3
cup
pesto of choice

Squeeze of lemon
optional
Instructions
Mix all ingredients in a salad bowl, and serve.
