Crunchy Red Cabbage Apple Slaw with Tahini

Ingredients

For the sesame dressing

  • 1/4 cup tahini
  • 1/4 cup water
  • 2 teaspoons maple syrup
  • 1/4-1/2 teaspoon toasted sesame oil (adjust to taste)
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon fine sea salt

For the slaw

  • 4 cups packed, thinly sliced or shredded red cabbage (200g)
  • 1 large or two small apples (I recommend Granny Smith), peeled and julienned (150g)
  • 3 tablespoons hemp hearts

Instructions

  • Whisk dressing ingredients together and set aside.
  • Dress the shredded vegetables and hemp seeds with dressing; you can use as much as you like, but make sure you coat everything well! Serve.
