Sun-Dried Tomato Tahini Dressing

Ingredients

  • 1/4 cup tahini (60g)
  • 8 sun-dried tomato halves (oil-packed or reconstituted in hot water before blending)
  • 3 tablespoons apple cider vinegar
  • 1/4 cup olive oil (60ml)
  • 3/4 cup water (180ml)
  • 1 tablespoon nutritional yeast
  • 1/8 teaspoon fine salt
  • 1 clove garlic, roughly chopped
  • 1/8 teaspoon freshly ground black pepper

Instructions

  • Blend all ingredients together in a powerful blender till smooth. Store in an airtight container in the fridge for up to 1 week.
