    I love roasted beets—in salads, bowls, pasta, wh I love roasted beets—in salads, bowls, pasta, whatever—but used to avoid making them because it felt like a hassle. Especially peeling the raw beets 😩 Sooo, this has become my go-to method: wrap the beets in foil, coat them lightly with oil (or use avocado or olive oil spray), wrap ‘em tightly in foil, roast till tender, then slip the skins off under cold, running water. It’s easy, and in addition to eliminating the need to peel, trapping in moisture by roasting in foil also results in ultra-tender beets! Store them whole, chop them, or slice them: it’s up to you. I’ll share my favorite way to marinate them next week 😊

    These strawberry overnight oats with homemade maca These strawberry overnight oats with homemade macadamia milk are a beautiful way to start your day! 😍🍓 They’re going to be my go-to meal prep breakfast of the summer.

Step 1: make an ultra-creamy, 4-ingredient, homemade batch of macadamia nut plant milk.
Step 2: pour it over rolled oats and chia seeds.
Step 3: slice some strawberries, toss them with a touch of lemon juice and maple syrup.
Step 4: layer your oats and strawberries in mason jars and dip into a fresh, uplifting morning meal

The macadamia nut milk is really the star of the show here. Sure, it gives the overnight oats luxurious creaminess and subtle vanilla notes. But it can also be used to make homemade lattes, plant-based hot cocoa, or simply enjoyed on its own. It’s my favorite plant milk to make from scratch!

    Let’s celebrate spring with a fresh, simple bowl Let’s celebrate spring with a fresh, simple bowl of plant-based cream of asparagus soup! 💚

This soup owes its lovely, creamy texture to macadamia oil—and a bonus swirl of macadamia nut cream on top, if you’re feelin fancy 🌀
〰️
You’ll start by sautéing onion and garlic in the oil, add asparagus and broth, followed by a fistful of fresh parsley, or any other spring herb. Then you’ll use an immersion blender to blend the soup up, right in the pot. Finish it with a dollop of macadamia nut cream, and/or a few steamed asparagus tips if you like, and voila—a warm bowl that’s perfect for the season.

And let’s talk about macadamia nut oil! Love this oil for cooking and eating well. Macadamia nuts and oil are an excellent source of monounsaturated fatty acid, including Oleic acid. Oleic acid is associated with reductions in LDL (aka “bad”) cholesterol—that’s good news for heart health! Macadamia nuts also have a 6:1 ratio of omega-6 to omega:3 fatty acids, which is a higher proportion of omega:3s than many other nuts. Omega:3 fatty acids are associated with anti-inflammatory activity, which can benefit our hearts, brains, and overall well-being.

From a culinary standpoint, I love that macadamia nut oil has a high smoke point—around 400°F-450°F—so it’s suitable for cooking at higher temperatures. It’s also got a neutral flavor, which makes it super versatile.

Seriously: what soho or salad or bowl or pasta isn’t a little more fun (and nutrient-dense) with these salty, savory beans on top? Orange tahini dressing!! Similar to others I’ve shared, honestly, but the freshly squeezed OJ and zest give it this wonderfully sweet, tangy flavor. Pour it on a grain bowl or massage it into some kale or drizzle it all over a sheet of roasted veggies or do whatever you like—it’ll brighten up any meal or snack 🧡
