Otherwise known as the “pie” that is, in fact, a cake! And a wonderful cake at that. You make it in the same way that you’d make upside down cake, adding the cranberries and chopped walnuts to the bottom of a pie dish, then pouring vanilla cake batter over them. But there’s no flipping at the end. Just bake, slice, and enjoy. For any Laurie Colwin fan who’s reading, yes, this is a very faithful vegan rendition of her recipe. This is a great example of a recipe that has grown as I've grown. When I first created it, I was so attached to the idea of using oven-toasted quinoa in the salad for a crispy component. But no matter how many times I tried it, it never quite felt right. After lots of tinkering, I took a totally different approach, using fluffy, tender quinoa, oven-roasted beets, and—for that crunch I wanted so much—my crispy vegan candied pecans. The result is a colorful, sweet and savory, festive salad that is finally destined to become a keeper around here. Just the way it is 😊⁠

Classic and COZY 🤗 This recipe has it all: the salty and deeply savory broth, those sweet caramelized onions (3+ pounds of them) and crispy cheese toasts that will soak it all up, little by little. I like to use my homemade, melty vegan cashew mozzarella cheese, which is pictured, but you can use store-bought vegan cheese, too. My favorite is the mozzarella olive oil cheese shreds from @goodplanetfoods 🫶
